Chives

The chive is the smallest member of the onion family, closely related to garlic, leek and shallot.

Essential oil with sulfur compounds , which has a digestive-tonic and stimulating effect.The plant is hardly perennial that grows from bulbs. The slender aromatic leaves are about 30 cm tall;. The Fresh leaves can be constantly cut for kitchen use, even until the first frosts.

Culinary use:

Chives are a marvellous flavoring to add to egg or cheese dishes like omelets. They are also very tasty added to mashed potatoes, or to melted butter poured over new potatoes. They add a delicate onion flavor to soups, sauces, and salad dressings, and can be used freely to soups, sauces, and salsa –green combinations. They are also good with cucumber or tomato salad.

Medicinal use:

Chives are not used medicinally, but like all the onion family they have a beneficial effect on circulation and digestion, thanks to the sulfur compounds in their powerful flavor.
